Plywood
For the vast majority of my cabinet bodies (aka carcasses), I use Columbia Forest Products UV Maple Plywood. It's also constructed with solid veneer cores so that it resists moisture far better than most of my competitors carcasses which incorporate some sort of particle board. Cabinets should be expected to last for generations. At some point, the bodies will almost inevitably suffer water damage. My materials can resist this while most of my competitors' products are ruined - usually after thousands of dollars of stone countertops are installed on top of them.
For natural or stained cabinet bodies, I use the highest-grade (A1) plywoods in the selected wood species and finish them in my facility with an equally tough two-component conversion varnish.
